Working in the kitchen can be busy. It is best to wash hands and use utensils to avoid the contact of raw foods. The microorganisms can easily be transferred from raw food to food that is being prepared through dirty hands, so a chef must wash hands each time he or she touches the raw food. The use of untensils in this case to handle raw food will significantly reduce the frequency of washing of hands one has to experiment in the kitchen. Hand sanitizers are not good choices in the kitchen, because they are only effective when hands are not visibly soiled.
