The flour contains gluten. The process of kneading warms and stretches these gluten strands, eventually, the creation of a spring and elastic dough. If the bread dough is not kneaded enough, not not going to be able to maintain the small bubbles of gas (CO 2 ), created by the baking soda or yeast. The bread would be a heavy lump.
