I think the answer is that the sugar crystals with agitation to 15 degrees Celsius. The solubility is the maximum amount of a substance that can be dissolved in a given amount of solvent at a specific temperature. There are two main factors that affect solubility are temperature and pressure. Temperature affects the solubility of solids and gases, but pressure only affects the solubility of gases. The increase of the surface area of solutes also increases the solubility.
