The official language of the Ottoman Empire as set by the Young Turks was the (Ottoman) Turkish. The Ottoman Empire encompassed Turkey today, so, obviously, the language that is spoken there is going to be Turkish. Turkish is a language that belongs to the group of Turkic languages, along with Kazakh, Uzbek, and 30-ish other languages, some of which are extinct today.
