The water has a high specific heat capacity. The specific heat capacity is the amount of heat required to raise the temperature of one gram of a particular substance by one degree Celsius. The high specific heat capacity of water is due to the hydrogen bonding that exist between the molecules of water. The hydrogen bond is very strong and will take a lot of heat to break the bonds. Therefore, it needs a lot of warming to an increase of the temperature of water by one degree Celsius. This is also the reason why water has a high boiling point.
