Can you write your living will out to where you can never change it?

It would be very difficult, because while you are mentally competent, you are able to change things at any time. And you should be able to! (Undue influence more applies to regular Wills.) However, I think that if you had a carefully made arrangement with a trusteeship involved, that there may be a way to do it. Is that...no, can't do it. You are definitely going to need an attorney in this case. This is not a question of a standard of legal responsibility for advice. You flat out need a lawyer to even begin to be able to do that.
